South African winemaking is precise and seasonal. The harvest hits and the entire industry needs cold capacity at the same time. Cold-stabilisation runs after fermentation and tied-up tank capacity is the bottleneck. Bottle storage and ageing depend on stable temperatures over months, not weeks. We work with cellars from boutique to commercial. The use cases are different at each end of the spectrum but the underlying need is the same, cold, on demand, when the harvest or the production cycle calls for it.
The Western Cape wine belt we serve
Stellenbosch. The biggest concentration of premium estates in SA. We deliver reefers across the appellation for harvest grape cooling, cold-stabilisation tank-side, and chilled bottle ageing. Both the small estates with a single fermentation cellar and the larger groups with multi-site operations.
Paarl, Franschhoek and Wellington. Established wine regions with similar cold demand profiles to Stellenbosch. Harvest pressure runs slightly later in some Paarl pockets and we plan inventory for the regional differences.
Robertson, Worcester and Bonnievale. Drier, hotter inland appellations where pre-fermentation grape cooling is non-negotiable. Reefer cold next to the press hall is standard practice for many producers here.
Constantia, Durbanville and Tygerberg. Smaller-volume premium-focused producers. Often need cold for finished bottle storage rather than harvest pressure.
Cape South Coast, Hermanus, Walker Bay, Elgin. Cool-climate producers with smaller footprints. We service these on the Cape Town delivery route.
Use cases through the wine production cycle
Pre-fermentation grape cooling. Grapes come off the vines warm in summer and need to drop temperature before they go to press. Holding fruit at 4 to 8 degrees for a few hours preserves freshness and stops oxidation. A reefer container at the cellar door, sized to your harvest throughput, gives you that capacity without the capital build.
Cold-stabilisation. After fermentation, white and rosé wines are chilled to roughly minus 4 degrees Celsius for several days to drop tartrate crystals. Cold-stab tanks tie up tank capacity at exactly the time the cellar needs it for the next vintage. Operators run cold-stab inside a reefer container as overflow capacity, parking the wine in IBCs or barrels and letting the unit hold the temperature for the cycle.
Malolactic fermentation control. Some red wines benefit from temperature control during malolactic, typically 18 to 20 degrees Celsius. A reefer can hold barrel rooms at the right temperature for the malolactic window when the cellar's main system is running cooler for whites.
Finished wine ageing and storage. Bottle ageing at stable cellar temperature, typically 12 to 16 degrees Celsius. Producers without a temperature-controlled cellar use reefer containers as climate-stable bottle ageing rooms, especially during summer when ambient pushes well above the target window.
Distribution buffer cold. Finished wine staging before it loads onto the export consolidation truck or the local distribution run. Holds product cool until the vessel sails or the truck rolls.
Spec for wine cold storage
Wine cold demand spans a wide temperature range, from minus 4 for cold-stabilisation up to 18 to 20 for malolactic and 12 to 16 for ageing. Our reefer fleet runs minus 25 to plus 25 degrees Celsius operating range, so a single unit covers the whole production cycle if you need it to.
Sizes 6m, 8m, 10m, 12m. The 6m suits a single-cellar boutique or a single-purpose use (cold-stab tank room). The 12m is the workhorse for multi-tank cold-stab or larger-volume finished bottle storage.
Three-phase power is standard for the larger units. Where rural cellar electrical infrastructure is older, we work with single-phase or hybrid generator running.
Internal racking is optional. Customers who run barrels or IBCs inside the unit ask for a level-floor configuration; bottle-storage customers sometimes ask for a rack build at hand-over.
Why hire instead of building wine cellar cold
A purpose-built cellar cold room is a long-lead capital project, sized to peak demand. Reefer container hire matches the seasonal nature of winemaking, you take capacity for harvest, scale up for cold-stab, and hold one or two units year-round for finished wine. When the contract ends, the unit goes back. No stranded asset, no demolition, no off-season operating cost on cold capacity you are not using.
For boutique cellars the maths is even more compelling, a permanent build is rarely justifiable on the volume, but a hired reefer for the harvest weeks is.
Site readiness for cellar deliveries
Cellar yards are often tight and we plan crane access carefully ahead of every delivery. The unit needs a level concrete pad sized to the unit, three-phase power matched to the spec, and clearance for the truck and crane. Our delivery team does a final access check by phone the day before, and we walk through site readiness on the call when we quote.
Standard delivery window is 5 to 7 working days from order confirmation. During harvest peak (February to April for most of the Western Cape) we hold inventory closer to the wine belt and same-day or 48-hour deliveries are sometimes possible.

Can I run cold-stabilisation in a reefer container? Yes. The reefer holds down to minus 25 degrees Celsius, which is well below the minus 4 most cold-stab cycles need. Park the wine in IBCs or barrels inside the unit and let the reefer hold the temperature for the cycle duration.
Do you deliver to Stellenbosch and Paarl? Yes. We deliver across the Western Cape wine belt, Stellenbosch, Paarl, Franschhoek, Wellington, Robertson, Worcester, Hermanus, Elgin and the smaller appellations. Cape Town is one of our main delivery routes from the Ballito yard.
How fast can you deliver during harvest? Standard window is 5 to 7 working days. Can I rent a reefer for just the harvest weeks? Yes. Short-term seasonal hire is standard for wine customers, six to ten weeks for harvest, three to four weeks for cold-stab. We price it differently from monthly rolling. Tell us the term and we will quote it.
What temperature range do wine customers usually ask for? Pre-fermentation grape cooling: 4 to 8 degrees Celsius. Cold-stabilisation: minus 4 to 0. Malolactic control: 18 to 20. Bottle ageing: 12 to 16. A single reefer covers all of those across one unit's operating range.
